Pressed for time in the mornings? Try this simple, quick and tasty recipe that can be prepared ahead of time for the busy person on the go.
Frittata muffin recipe
Total Time : 30 Minutes
Prep Time: 10 Minutes
Cook Time: 20 Minutes
1/2 cup Milk
1/4 tsp Salt
1/8 tsp Pepper
1 cup Shredded Cheese (4oz)
3/4 cup Chopped Asparagus
1/4 cup Chopped Red Bell Pepper
2 tbsp Chopped Red Onion
Makes 12 muffins frittata
1) Heat oven to 350F. Beat eggs, milk, salt and pepper in a medium bowl until well-blended. Add cheese, asparagus, bell pepper and onion. Mix well. Spoon evenly into 12 greased muffin cups. about a 1/4 cup each.
2) Bake in 350F oven until just set. 20-22 minutes. Cool for 5 minutes. Remove from cups. Serve warm.
This is one of my favourite recipes. I can make it the night before and refrigerate, in the morning I just pop it in the microwave !
